Irresistible treats (without sugar)

Super delicious date delights – treats with no sugar at all and they are super tasty.

  • 100 g pitted dates (organic)
  • 1½ tbs dried or fresh mint (can be left out)
  • 1 tbs coconut oil (extra virgin – super healthy)
  • 15 g shredded organic coconut
  • 1 tsp vanilla (no sugar!)
  • 10 g cocoa powder (not sugar!)

Combine it all in a food-processor till it sticks together. Roll it out in little balls (kids will love this) and roll them in shredded coconut and put them in the fridge.

Super healthy lunch with leftover fish

I just came up with that one last Sunday. We had fish on Saturday and had a bit left over and I can certainly recommend you this one. So remember to cook extra fish next time, so you have spare for making this lunch again. It takes 10 minutes to make and look like a fine restaurant meal.

You need:

  • Fish (when still warm take a fork and tear the meat from bones and skin for next day)
  • Mayo (the one with just egg, vinegar and salt and maybe one more ingredient – is healthy)
  • Organic Lemon
  • Organic broccoli
  • Organic apple
  • Organic avocado (can be left out)
  • Fitness bread or pumpernickel or European rye bread (thin hard slices with healthy grains)
  • Curry

Cut half an apple into small dices, slice the remaining half apple in thin slices. Mix the fish with juice from the lemon, mayo, appledices and salt, pepper and curry. Steam broccoli for about 5 minutes (just put them in your colander and put the colander in a big pot with 4 cups boiling water - water should not reach the colander).  Take the bread and put fish-salad on top on one half and avocado on the other with some mayo underneath, and finally decorate your plate with the appleslices and the hot broccoli.

Ice Cream for breakfast anyone?

Yes you can actually get a healthy breakfast that tastes like ice cream.

Here is the recipe for 2 people:

2 cups of ricemilk or soya

3 tbsp flaxseed oil

1 scoop lecitin

1 scoop protein powder

200-300 g of frozen fruits

1 banana

Juice and shredded peel from 1/2 an organic lemon

Start with all the dry ingredients, then add lemon, oil and top up with ricemilk little by little so you get the just right consistency.

Eat with a spoon from a tall glass.

What to have in your kitchen to be healthy

Here is a short list of what we keep in the pantry and fridge to stay healthy (make it all organic);

Virgin coconut oil (fantastic for high temperatures and a very healty alternative to oil)

Flaxseed oil (take at least 3 tbsp a day to keep a healthy body)

Multivitamin (pre natal for me and one with at least 15 mg zinc for him)

Quinoa (fantastic instead of rice, to make cakes and bread of)

Brown rice flour (so much healthier than white flour and its gluten free too)

Stevia (healthy non calorie sugar substitute)

Protein (every morning I bled a fruit smoothie with protien in to make a whole meal that meets the bodys requirements – find recipe on this page)

Lecithin (good for memory)

Mayo (the healthy one with only eggs, salt, vinegar use as substitute for butter and cream)

Ricemilk and soyamilk

ORGANIC! Nuts, raisins, apricots, cranberries, dates, prunes ect (healthy snacks)

Psyllium (fibre that most do not get enough of, use very little though its effect full)

Frozen fruits

vegetables (snack carrots)

Organic meats

Quick healthy lunch

Heres a quick healthy lunch (pick all products organic), takes 3 minutes to make if you are slow with the can opener.

1 tortilla wholewheat wrap
1 can of tuna
1 avocado
5 tsp mayo (the healty kind with only eggs, vinegar and salt)
3 tsp lemon
1/2 apple sliced paper thin
Salt & Pepper

Wrap it all up and enjoy!

Fantastic gluten free, sugar free, healthy tortillas and cakes

With this recipe you can make tortillas and cakes really easy. All ingredients are organic naturally. Take one cup of Quinoa and roast them on very low heat so they all get a little brown, then ad 1 3/4 cups of water (or follow the package) and let it boil for about 12-15 minutes.
Mix in following:
1 egg
4 tbls of buckwheat or brown rice flour
1/2 cup of ricemilk
1 tsp salt

Mix it all toghter and fry it on low heat in Extra Virgin Coconut Oil to little tortillas or cakes.
If you want to make them sweet then add raisins, cranberries, nuts, Stevia, coconut, vanilla, chopped dates or whatever you might have in your pantry thats naturally sweet.
